i thought i would share my favorite granola recipe, because it's so very easy (and affordable)! i guess i shouldn't say this is my favorite granola recipe to make, because it's the only one i've ever made ;o). when you find something you like stick with it i guess!
you will need:
2 cups rolled oats
1 tsp. cinnamon
pinch of salt
3 tbsp. plus 1 tsp. veggie oil
1/4 cup honey
1/4 cup packed brown sugar
1 tsp. pure vanilla extract
start by preheating the oven to 325, and line a baking sheet with parchment paper.
in a large bowl, toss the oats with the cinnamon and salt.
in a medium bowl, stir together the oil, honey, brown sugar, and vanilla. whisk until completely combined.
pour the honey mixture over the oats mixture and use your hands to combine them, gather up some of the mixture in each hand and make a fist. repeat until all the oats are covered.
pour the mixture onto the prepared baking sheet, and make sure to spread it out evenly. you can gather some mixture together if you like a more 'clumpy' granola :o).
bake for 5 minutes, then use a spatula to lift and turn over. put back in the oven for an additional 5 minutes.
i've burned many a batch of this because i thought it wasn't done after only 10 minutes. let the granola cool for at least 15 minutes, and it will firm up and get crunchy.
and finally, the reason i make granola ;o).
