$50 a week... continued!

it's been so long that i wrote about food that i have so much to share!  i'll give you the short version of some items we've worked into our menu.  we still make one new recipe a week, so that leaves lots of room for new foods!  you'll notice a trend among the recipes we try, and yes i do love the pioneer woman.


this used to be a cowboy calzone from the pioneer woman's cookbook.  obviously they were just too delicious to stop and take a picture.  we used our go-to dough recipe (if you don't own the joy of cooking, i highly recommend it, we use it for everything!), and did a loose interpretation of her filling.  the cast of characters included ground beef, a can of rotel, white onion, and mozzarella.  if anyone wants the actual recipe i can type it up in its entirety at a later date ;).


ry saw this idea in one of his favorite cookbooks, the silver spoon cookbook.  he cooked a whole chicken stovetop in the cast iron skillet, and it came out delish!! our kitchen was quite smokey, but it was worth it :).


shredded chicken and what i like to call cooked salsa on homemade tortillas, yum!!  our little salsa is just corn, black beans, red bell pepper, onion and red pepper flakes.  easy and so yummy!


this was our main dish for our valentine's day dinner.  of course you can find the full recipe on p-dubs site.  it was kinda funny because we really wanted to try this dish because neither of us had ever eaten risotto.  the only problem with that was... neither of us knew what it was supposed to come out like.  we're pretty sure we would've gone home for it had we been on top chef, but we really loved it!


i cannot take credit for the picture of this mocha silk pie, but i did make one.  i can't believe i'm saying this, but this pie was too sweet for me!  i have rarely uttered these words, but to me, this pie needs some tweaking.  i will say that the crust is INCREDIBLE.  i could have eaten it alone as a cookie, and from now on any filling i make is going in this crust!!

and now for the grand finale...


we just found out that the albertson's, that is literally around the corner from us, carries this bueno green chile!  we couldn't believe we'd been living the past year not knowing this juicy nugget of information.  so naturally we made a green chile chicken soup right away.  i must say, it was delicious!!

it's amazing how when you're used to being on a grocery budget, it doesn't seem so hard :).

I don't know which is more fun.....you going absolutely "third" grade excited about the cooking.....or ryan doing so many things in the kitchen! I am proud of you both. Albertsons is great.....well, bueno!

is "third" grade excited a good thing or a bad thing? on one hand i'm thinking i teach first grade, but on the other hand i'm thinking... i am 28. haha. that ryan is quite amazing!
